Blueberry Galette with Puff Pastry

Easy to make, this Blueberry Galette is made with frozen puff pastry and fresh blueberries. Whether you bake this galette in the oven or the smoker, this dessert is sure to please.

This is a go-to recipe for a quick and easy dessert. When we host a backyard BBQ, this is one of the desserts we like to serve, especially when blueberries are in season in late July and early August.

What’s In A Blueberry Galette?

This recipe is fairly easy and has only six ingredients.

  • Fresh Blueberries.
  • Lemon. Both the zest and the juice is used.
  • Cornstarch.
  • White sugar.
  • Egg.
  • Puff pastry. We use frozen puff pastry sheets that we thaw before making this recipe.

Can Frozen Blueberries Be Used In This Galette Recipe?

This galette recipe has been tested with both fresh and frozen blueberries. We found that fresh berries gave the best results.

It is possible to use frozen berries in this recipe, just keep in mind that the filling won’t thicken as well as using fresh.

Baking Blueberry Galette with Puff Pastry

There are a couple of ways to make this galette. Either way is easy.

The traditional way of baking a galette is in an oven on a baking sheet. We have baked it this way, especially in the winter months.

During the summer months, we use our pellet smoker for baking and that is how we bake this galette. When it is 30+ degrees outside plus humidity heating up the house is out of the question. So we bake on the smoker. Apple, cherry or competition blend pellets are great ways to add a smoky flavour to this dessert.

Serving Blueberry Galette

To serve this galette, let it cool before slicing. If you try to slice it while it’s hot, the berry filling will make a mess. Room temperature or cooler is best to slice this dessert.

Once sliced, the galette can be served alone or with a scoop of ice cream or a dollop of whipped cream on top.

When serving on it’s own, we like to add a dusting of powdered sugar over the top. A mint leaf makes a nice decoration for the top of a slice as well.

Storing Leftover Galette

Any leftovers should be covered and refrigerated for up to three days. Unfortunately this recipe doesn’t freeze well so we don’t recommend freezing.

Blueberry Galette with Puff Pastry

Ingredients
  

  • 3 cups fresh blueberries
  • cup sugar
  • 1 Tbsp cornstarch
  • 1 lemon, zest and juice
  • 1 sheet of frozen puff pastry, thawed
  • 1 egg, beaten
  • 1 Tbsp sugar, for dusting.

Instructions
 

  • In a large bowl, combine blueberries, sugar, cornstarch and lemon juice and zest together until fully combined.
  • Spread puff pastry out on a parchment lined baking sheet.
  • Place blueberry mixture in centre of puff pastry, leaving 2-3 inches of space between the blueberries and the edges.
  • Gently fold the edges on the pastry in toward the centre, overlapping the sides to form an oval or circle. Press the edges together to seal.
  • Brush the outside of the pastry with the beaten egg and sprinkle sugar over the egg wash.
  • Place the galette in the fridge while preheating, at least 15 minutes.
  • Preheat oven or smoker to 400℉.
  • Bake for 30 to 35 minutes or until the pastry is golden.
  • Allow to cool on the pan to room temperature before slicing and serving.
