Griddle Meatloaf Sandwiches

Leftover meatloaf? Turn it into a meal that is far from boring and everyone will love. These Griddle Meatloaf Sandwiches are easy-to-make and packed with flavour, making them a perfect meal for lunch or dinner.

These sandwiches are a family favourite that we make with leftover meatloaf. Sometimes we make a meatloaf just so we can make this recipe.

Ingredients For Griddle Meatloaf Sandwiches

To make these meatloaf sandwiches there are only a few ingredients needed.

  • Leftover Meatloaf. Any meatloaf will work. Use your favourite or try our Smoked Meatloaf.
  • Cheese. We like use cheese slices like Kraft Singles, but we have made these sandwiches with shredded sharp cheddar as well.
  • Bread. Texas Toast bread works best for this recipe.
  • Mustard.
  • Butter.
  • Vegetable Oil.

Additional Toppings For Sandwiches

For toppings, we like to add mustard because we add a lot of flavour to our meatloaf already. But sometimes we add other toppings.

  • Pickles. These add a crunch and flavour.
  • Fried onions.
  • Chipotle mayo.
  • BBQ sauce.

Dipping Sauce For A Griddle Meatloaf Sandwich

Griddle Meatloaf Sandwiches are perfect for dipping. Try one of these on the side to dip sandwiches in.

  • BBQ Sauce. We use our Dr Pepper Sauce.
  • Spicy mayo.
  • Queso.
  • Ranch Dressing.

Best Meatloaf For Sandwiches

To make these sandwiches a firm meatloaf that stays together is needed. A loose meatloaf will fall apart on the griddle.

We have tried these sandwiches with beef, chicken and turkey meatloaf, all with great success.

Tips To Make This Recipe

Cold meatloaf will slice more easily. We recommend that the meatloaf is chilled before slicing if you aren’t using leftover meatloaf.

Slice the meatloaf at least ½-¾ inches thick to ensure it stays together when grilling.

Serving these sandwiches hot is the best way to serve them. We don’t recommend making extras for leftovers.

Can These Sandwiches Be Made Another Way?

Our favourite way to make these sandwiches is on the Blackstone but they can also be made other ways.

  • In a cast iron frying pan. This way is the same as on the griddle but only one or two sandwiches can be made at a time.
  • A non-stick frying pan.
  • On the BBQ using a grill mat. This is the closest thing to an outdoor griddle and we used to use this method before we got a Blackstone.

Griddle Meatloaf Sandwiches

Easy to make using leftover meatloaf, these griddle sandwiches make a great lunch or dinner.
Prep Time 10 minutes
Cook Time 15 minutes
Course Dinner, Lunch, Sandwiches
Servings 4 sandwiches

Ingredients
  

  • 2-4 Tbsp vegetable oil
  • 4 slices meatloaf, ½-¾ inches thick
  • 8 slices Texas toast
  • 8 slices cheese
  • 4 tsp mustard
  • 4 Tbsp butter

Instructions
 

  • Heat the griddle to medium and add the oil to the griddle if needed.
  • Grill the meatloaf 2-3 minutes per side to heat through and create a crispiness on both sides.
  • Place 1 tsp of mustard on 4 slices of the bread.
  • Put a slice of cheese on each slice of bread.
  • Top 4 slices of bread with the meatloaf slices.
  • Close the sandwiches with the other slices of bread and cheese.
  • Butter both sides of the sandwiches.
  • Grill the sandwiches on both sides until golden, about 2-3 minutes per side.
  • Serve immediately.
