These cupcakes also freeze well for up to 3 months without icing or frosting on them.
Moist Yellow Cupcakes
Ingredients
- ⅓ cup vegetable oil
- 2 eggs
- 1 cup white sugar
- 1 Tbsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup milk
Instructions
- Preheat oven to 350℉ and line a muffin tin with cupcake papers
- In a stand mixer, beat together oil, eggs and sugar until combined.
- With mixer on low, add flour, baking powder and salt.
- Slowly add in the milk and continue mixing until the batter is well mixed and smooth.
- Fill cupcake papers evenly. There may be batter remaining for extra cupcakes depending on the size of the papers.
- Bake in preheated oven for 22 minutes or until cupcakes are baked through the centre. (ovens vary so this may take more or less than 22 minutes)
- Cool in pan for 2 minutes then transfer to a wire rack to cool completely before frosting.
- Store in air-tight container until ready to serve.
