Pumpkin Spice Buns have the warm pumpkin spice flavour wrapped in pillowy cinnamon buns. These buns make a great fall treat that is easy to make.
These buns are a fall favourite in our house. The smell of these buns alone makes our mouths water.

Ingredients For Pumpkin Spice Buns
These buns are made from homemade dough and a pumpkin spice filling. They are topped with a simple icing.
Dough:
For the dough you will need:
- Milk. Whole milk works best because of the fat content, but we have used 2% when whole milk is not on hand.
- Yeast. We use traditional dry active yeast.
- White sugar.
- Butter. We do not recommend using margarine. For the best flavour and results, we recommend using butter made from 100% cream.
- Large egg.
- All-purpose Flour.
Filling:
To make the filling, three ingredients are needed:
- Brown sugar. We use light brown sugar.
- Pumpkin pie spice. Store-bought or homemade can be used.
- Butter.
Icing:
The icing is simple and made from three ingredients.
- Powdered sugar.
- Milk.
- Pumpkin spice syrup. Vanilla extract can be used in place of the syrup.
Recommended Equipment For Making These Buns
This recipe is easy to make but there is one piece of equipment that we recommend using.
We don’t make these without using our stand mixer. The dough can be kneaded by hand but using a stand mixer is much easier.
Serving Pumpkin Spice Buns
Warm Pumpkin Spice buns are a perfect fall treat in the evening or afternoon with a cup of tea or coffee. They pair nicely with a pumpkin spice latte if you want the full pumpkin spice effect.
Serving these as a dessert or snack is one way to serve these buns. But, they also make a great dish to serve as part of a weekend brunch.
We add them to the dessert table at Thanksgiving as well.
Storing These Buns
Any leftover buns should be stored in an air-tight container. They can last up to 3 days and be reheated in the microwave for 20-25 seconds.
Pumpkin Spice Buns
Ingredients
Dough
- 1¼ cups warm milk
- ⅓ cup white sugar
- 1 Tbsp dry active yeast
- ⅓ cup melted butter, cooled
- 1 egg, beaten
- 3⅔ cups all-purpose flour
Filling
- 1 cup brown sugar
- 2 Tbsp pumpkin pie spice
- ⅓ cup melted butter
Icing
- ¾ cup powdered sugar, sifted
- 2 Tbsp milk
- 1 Tbsp pumpkin spice syrup or 1 tsp vanilla extract
Instructions
Dough
- In the bowl of a stand mixer, combine the milk, sugar, and yeast.
- Set aside for 5 minutes to allow the yeast to bloom.
- Add melted butter, egg, flour, and salt.
- Using the dough hook, on low speed, mix for 1 minute to combine ingredients.
- Turn up the speed to the next level and knead the dough for 3-4 minutes. The dough will be slightly sticky and will pull away from the sides easily.
- Turn dough into a slightly oiled bowl, and cover it with plastic wrap and a tea towel.
- Let rise for 2-3 hours in a warm place until doubled in size.
- Once doubled in size, punch the dough down and turn it onto a lightly floured surface.
- Press or roll dough into a rectangle of 12-inches wide by 18 inches long.
Filling
- In a small bowl, mix the brown sugar and pumpkin spice together.
- Brush the dough with the melted butter.
- Sprinkle the brown sugar and spice mixture evenly over the dough.
Assembling
- Roll the dough on the long side to make one 12-inch long log.
- Cut the log in half. This will make it easier to slice.
- Cut 1-inch slices from each log.
- Lightly grease a 9-inch and 13-inch pan with butter or cooking spray. Or cover the bottom of the pan with parchment paper.
- Place the buns in the pan side by side.
- Cover pan with a tea towel and let rise for 20 minutes.
- Preheat oven to 375℉.
Baking
- Bake in preheated oven for 22 minutes or until golden brown on top.
- Remove from oven and cool in pan for 2-3 minutes before topping with icing.
Icing
- Whisk powdered sugar, milk and syrup together to create a drizzle for the buns
- Pour icing over buns and serve.
