Ingredients For Skillet Chocolate Chip Cookie
The recipe for this skillet cookie is very similar to a basic chocolate chip cookie recipe.
- Brown sugar.
- White sugar.
- Butter.
- Butter flavoured shortening.
- Eggs.
- Vanilla.
- Flour.
- Baking soda.
- Chocolate Chips.
Why Use Both Butter and Shortening?
We use a combination of the two because we have found that many butters have a higher water content than they used to. This water content in butter doesn’t yield good cookies.
Higher-priced butter doesn’t have the water content of lower-priced butter. We try to keep our recipes affordable, therefore we are using more shortening in our cookies for home baking.
Butter can be used in place of all the shortening if you prefer.
Add-ins For Skillet Chocolate Chip Cookie
This dessert is great as it is but you can add a few extras to take the cookie up a notch.
- Nuts. Stir in walnut, almond, or pecan pieces for a little crunch.
- Different chocolate chips. Add a mix of white and dark chocolate to the cookie.
- Caramel pieces.
What Size Skillet For Chocolate Chip Cookie?
For this recipe, we use a 12-inch cast iron skillet. Our skillet is old and well seasoned, a must for any cast iron pan.
We don’t oil or butter the pan because it doesn’t need it if the pan is seasoned.
If your pan is smaller, the recipe can be halved for a 6-8-inch pan.
Baking A Skillet Cookie
Our favourite way to bake this skillet cookie is in the smoker using mellow wood smoke. Normally we use a competition blend but we have also used cherry and apple which add a different flavour profile to the cookie.
This skillet cookie can also be baked in the oven using the same method as the smoker but without the smoke.
Serving Skillet Chocolate Chip Cookie
On its own or topped with ice cream, serve this cookie warm. Cut the cookie into triangles like a pie for serving.
This dessert is also best when it is still warm so it’s soft and the chocolate chips are melted.
Storing and Reheating Skillet Cookie
If you have any leftover skillet cookie, store it in an air-tight container for up to 2 days.
The cookie will harden as it cools and the best way to serve leftovers is by reheating it. To reheat, place a slice in the microwave with a damp paper towel over the top and heat for 20-25 seconds or until warm.
Skillet Chocolate Chip Cookie
Ingredients
- ½ cup butter flavoured shortening
- 3 Tbsp butter, softened
- 1 cup white sugar
- ⅔ cup brown sugar
- 2 eggs
- 1 Tbsp vanilla extract
- 2 cups all-purpose flour
- ¾ tsp baking soda
- 2 cups chocolate chips
Instructions
- Preheat smoker or oven to 350℉.
- Cream shortening, butter, and sugars together until smooth and creamy.
- Beat in egg and vanilla.
- Fold in flour, baking soda, and chocolate chips until flour is just combined.
- Spoon cookie dough into a cast iron skillet and smooth the top.
- Bake for 18-20 minutes or until just baked. Center will be soft and slightly wet.
- Allow to cool in pan for 5-7 minutes before serving.
