Smoker or BBQ
Ingredients
12
large dill pickles
12
bacon slices
⅓
cup
BBQ seasoning
½
cup
BBQ sauce, for dipping
Instructions
Heat smoker to 300°F and add wood chips of choice.
Remove pickles from jar and allow to sit on a plate or tray to dry a little but not too much
Using a toothpick, poke a few holes in the pickles to allow smoke into the pickle
Coat each pickle in BBQ rub or spice blend
Wrap one slice of bacon around each pickle and secure the ends with toothpicks.
Place in smoker and smoke at 300°F for 45 minutes or until the bacon is crispy.
Remove from the smoker and allow to cool slightly before serving.
Notes
*Alternatively, you can cut the pickles in half lengthwise and skip poking them. In this case, you would only need 6 pickles.
