Square Blueberry Oatmeal Muffins

Equipment

  • 6 hole brownie pan

Ingredients
  

  • ½ cup quick oats
  • ½ cup milk
  • ½ cup white sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 Tbsp butter, melted and cooled
  • ¾ cup frozen blueberries

Instructions
 

  • In a medium-sized bowl, soak oats in milk for 10 minutes.
  • Preheat oven to 375℉ and grease brownie pan.
  • Add egg, vanilla, and white sugar to the oats after soaking.
  • In a small bowl, whisk together flour, baking soda, and salt.
  • Add dry ingredients to the oats along with the melted butter.
  • Stir until almost completely blended.
  • Fold in blueberries.
  • Fill prepared pan with batter
  • Bake for 20-23 minutes or until fully baked in the centres. Rotate pan halfway through baking to ensure even baking.
  • Allow to cool for 5 minutes in pan before transferring to a cooling rack to finish cooling.

Brownie pan used for this recipe can be purchased on Amazon.
A 6 cup muffin pan can also be used.
