Easy Apple Zucchini Bread

Easy Apple Zucchini Bread is moist and flavourful. This recipe is made with fresh, diced apples and shredded zucchini, making it a great way to sneak in extra fruits and veggies.

Ingredients
  

  • 2 eggs
  • ¾ cup vegetable oil
  • 1 tsp vanilla Extract
  • ¾ cup white sugar
  • ½ cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 2 cups grated zucchini, about 175-200 grams
  • 1 large apple, peeled, cored and diced

Instructions
 

  • Preheat oven to 375℉. Grease a 9-inch bread pan.
  • In a large bowl, whisk together eggs, oil and vanilla until smooth
  • Stir in both sugars until combined.
  • Stir in flour, baking soda, salt, cinnamon and nutmeg until just combined.
  • Fold in shredded zucchini and diced apple.
  • Pour batter into prepared pan.
  • Bake for 45-55 minutes until a toothpick or fork inserted in centre comes out clean.
  • Cool in pan for 5 minutes before transferring to a wire rack to cool completely.
  • Slice and serve.
