This apple zucchini loaf has quickly become a family favourite. We used to only make this recipe during the fall harvest, but now it has become one of our most requested recipes, so we make it year round.

Ingredients For Easy Apple Zucchini Bread

To make this recipe, you need 12 simple ingredients.

  • Apples. Any apple will do. We have made this bread with Granny Smith, Gala, and MacIntosh.
  • Zucchini. No need to peel the zucchini before shredding it. The peels add colour to the bread.
  • All-Purpose Flour. We use unbleached all-purpose flour for this recipe.
  • Eggs.
  • Vegetable Oil. This can be swapped out for melted butter which will add richness to the baked bread.
  • Brown Sugar. This gives a caramel colour to the bread. It also acts as an acid to help activate the baking soda.
  • White Sugar. Adding white sugar gives a sweetness to the recipe.
  • Vanilla Extract.
  • Baking Soda.
  • Salt. Very little is needed to balance the flavours.
  • Cinnamon. A compliment to the apples.
  • Nutmeg. A spice that pairs well with apples and cinnamon.

Additions and Substitutions

There are a few additions and substitutions that can be made for this recipe.

Substitutions:

  • The all-purpose flour can be replaced with whole wheat flour. Or a mix of half all-purpose and half whole wheat flour can also be used.
  • The vegetable oil can be swapped with melted butter or margarine. Canola or corn oil can also be used.

Additions:

  • Chopped walnuts or pecans can be added to the batter along with the zucchini and apples. These will add crunch to the bread.
  • Chocolate Chips can also be added. We like to add mini chocolate chips when we want to add chocolate.
  • Additional cinnamon can be added for a spicier flavour.
  • If you like raisins, they are another great add-in.

Making Apple Zucchini Bread

This recipe doesn’t use any special equipment. And it only uses one bowl to make it.

The only equipment you need is:

  • A large bowl.
  • A spatula.
  • A whisk.
  • A box grater.
  • Measuring cups.
  • Measuring spoons.
  • Bread pan. (9-inch by 5-inch)

How To Serve Apple Zucchini Bread

When it comes to this Easy Apple Zucchini Bread, there are a few ways to serve it. It is great on its own but you can also serve it in other ways.

  • Warm with butter.
  • With a cup of chai latte. The apples and cinnamon are a great companion to the flavours of chai tea.
  • With Apple butter. Yes, there are apples baked into the bread, but if you toast the bread slightly and add a bit of apple butter, it tastes so good.
  • Jam. Again, a toasted slice of this bread with your favourite jam makes a great quick breakfast.

How To Store Apple Zucchini Bread

After cooling, Apple Zucchini bread should be kept in an air-tight container at room temperature. It can also be wrapped tightly in plastic wrap or foil. It will stay fresh for up to 3 days.

The bread can also be frozen in a freezer bag or air-tight container. When freezing, it is best to wrap the loaf in plastic wrap before placing it in a bag or container for freezing.  Thaw at room temperature before serving.

Ingredients
  

  • 2 eggs
  • ¾ cup vegetable oil
  • 1 tsp vanilla Extract
  • ¾ cup white sugar
  • ½ cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 2 cups grated zucchini, about 175-200 grams
  • 1 large apple, peeled, cored and diced

Instructions
 

  • Preheat oven to 375℉. Grease a 9-inch bread pan.
  • In a large bowl, whisk together eggs, oil and vanilla until smooth
  • Stir in both sugars until combined.
  • Stir in flour, baking soda, salt, cinnamon and nutmeg until just combined.
  • Fold in shredded zucchini and diced apple.
  • Pour batter into prepared pan.
  • Bake for 45-55 minutes until a toothpick or fork inserted in centre comes out clean.
  • Cool in pan for 5 minutes before transferring to a wire rack to cool completely.
  • Slice and serve.
