In a flat bottomed container, beat eggs and milk together until blended and smooth
Stir in vanilla
In a small bowl, mix together cinnamon, nutmeg, sugar, salt and flour.
Slowly add flour mixture to the egg mixture, beating to avoid clumps
Heat frying pan over medium heat and melt a Tbsp of butter to coat the pan well, add more butter if needed to coat the entire bottom
Dip one slice of bread at a time in the egg mixture, turning to coat.
Lift bread carefully out of the egg mixture and let it drain a little over the bowl, before transferring to the heated frying pan.
Cook for 3-4 minutes or until lightly browned before flipping.
Cook the other side until browned, about 3-4 minutes
Repeat with remaining slices of bread, you may have bread or egg mix leftover depending on how fresh your bread is.
Serve hot with maple syrup
