Everyone knows that brownies are delicious. And so are Chocolate Chip Cookies. But what if you combined brownies and chocolate chip cookies and baked them in a skillet? That is what a Brookie in a Skillet is.

Bringing Two Favourites Together Into One Dessert
This idea came to me as I was browsing the local dollar store and found small 6-inch cast iron frying pans. I was looking at the pans, thinking I could use them on the BBQ for skillet breakfasts. Then I saw brownie mix in the grocery aisle just like that, I was rushing home with four new cast iron pans. (Of course, they needed to be seasoned before I could bake in them)
I had been wanting to try brookies for a while. I just hadn’t done it yet. The cast iron pans gave me the idea to bake brookies in cast iron and see how they turned out.
I whipped a batch of brownies and a batch of chocolate chip cookies. The first batch failed. The cookie dough was cooked long before the brownies were.
I decided to try forming the cookie dough into a log, slice it about 1/2″ thick and freeze it before trying again. It worked!
The end result was a rich, sweet, and delicious baked dessert.
How to Make Brookie in a Skillet
To make these Brookies in a Skillet, I used my Espresso Brownies recipe and my Best Ever Chocolate Chip Cookies recipe. If you don’t have a 6-inch cast iron skillet, you can find them at Dollarama in Canada or on Amazon.ca or Amazon.com.
Make sure to make the cookie recipe beforehand. It needs to chill in the freezer for about an hour before baking. I only used half the cookie dough recipe to make four pans of Brookies in a Skillet. The other half I left in the freezer for the next time I make these.
The cast iron pans need to be greased before placing three to four frozen unbaked cookies on one side of the pan, then pour 1/4 of the brownie batter on the other side of the pan. Repeat with the remaining half of the cookie batter and the brownie batter, filling four pans in total.
You can also place the cookies in the center of the pan and pour brownie batter over the cookies.
Bake in a 350°F preheated oven for 20 – 25 minutes or until baked through.
Let cool slightly before serving.
These can be cut into smaller pieces and served.
Or serve in the pan with ice cream on top, drizzled with chocolate sauce. This is how my kids enjoy them.
Mike and I just like eating them right out of the pan while they are still hot.
