Ingredients For Easy Strawberry Shortcake Bites

To make this dessert, you will need a total of five ingredients.

  • Strawberries. Fresh strawberries are what is used in this dessert.
  • Sugar. White sugar is what sweetens the berries. There is not a lot of sugar in this recipe because we prefer this dessert to be less sweet.
  • Angel Food Cake. This can be store bought or homemade.
  • Whipped Cream. We like to use homemade whipped cream but store bought can be used as well. Homemade will add time to make this dessert but in our opinion it is better tasting.
  • Dark Chocolate. Any dark chocolate bar or baking chocolate squares can be used. This is used only on top of the dessert and can be omitted if you prefer.

Grating Chocolate For The Top Of This Dessert

It is easy to grate chocolate for these little bites. All that is needed is a zester like the ones used for lemon zest. We use a Starfrit zester that we have had for a few years and it is does a great job for grating chocolate.

Can You Use A Box Mix Angel Food Cake?

Yes! And to be honest, it is what we use the most when making this dessert. But that means it is no longer a no bake dessert.

Using a boxed cake mix is cheaper than buying angel food cake premade, in our grocery stores. A box of Angel food cake at the time of this writing is $4.97, yet a premade cake is $7.49.

When using a boxed mix, you can bake the cake in the shape you want to use. We have made this recipe using a sheet pan, although that is trickier than using other pans. The easiest we have found is to bake the cake in 9 inch bread pans.

Preparing Easy Strawberry Shortcake Bites

There are a few tips and tricks we use to make this dessert. The hardest part of making this shortcake is cutting the angel food cake into squares.

To cut the angel food cake, you want a very sharp knife or serrated knife. And let the knife do the work so you don’t squash the cake.

Once the cake is cut into squares, all that is left to do is add the berries and whipped cream. Top with grated chocolate. And that’s it!

Garnishes For Strawberry Shortcake

Although we usually make these shortcake bites with grated dark chocolate, there are other garnishes that can go on top of this dessert.

  • Powdered sugar. Dust the tops of these with powdered sugar for a sweeter taste and different look.
  • A mint leaf. Adding a mint leaf to the dessert or even a few of the squares on the tray, adds a pop of colour and the option of having a cool, refreshing hint of mint if desired.
  • A blueberry or blackberry. Adding a contrasting coloured berry also makes this dessert pop.

How Many Servings Does This Recipe Make?

This depends on the size of the angel food cake you are using.

One boxed mix that we bake in bread pans will yield approximately 48 servings. We will make this for larger crowds and usually our guests will eat more than one since these are smaller than average desserts.

When making this recipe for only a handful of people, we will buy the smaller, individual shortcake in the bakery of our local grocery store. These usually come in a 6-pack. And we cut the amount of strawberries and whipped cream in half.

Serving This No Bake Dessert

Serving this dessert is easy because it is small enough to pick up with your fingers or to serve on small plates or even a napkin.

It is best served fresh so that the cake doesn’t get soggy.

When To Serve This No-Bake Dessert

Anytime is a good time to have this dessert, but it is especially delicious in late June and through July when strawberries are in season.

This dessert is also great for Canada Day parties and BBQs because it is mostly red and white, the colours of Canada. We skip the chocolate on top and sprinkle white decorating sugar on top instead.

Blueberries can be added to make these red, white and blue for Independence Day as well.

Add a toothpick flag of Canada or The United States to each or a few of the bites for added decoration.

Making This Dessert For A Crowd

If making these for a crowd, sometimes we like to place each one in a cupcake liner that has been slightly flattened. Then place them on a serving tray. This way they can be picked off the try using the liner, making it easy to serve. ( And in our city, the liners can be placed in our weekly composting that is picked up by the city, instead of the garbage)

Storing Leftovers

If there are any leftovers, it can be stored in the fridge, covered for 24 hours. The only issue may be that the cake will get soggy from absorbing the liquid of the strawberries.
