These Griddle Patty Melts are a family favourite. We used to make them in a cast iron pan. Since getting our Blackstone Griddle, we have made these patty melts on the griddle.

What is a Griddle Patty Melt?
A griddle patty melt is a grilled seasoned burger patty, topped with grilled onions, and melted cheese. The patty is served on toasted bread.

Ingredients For Patty Melts
The recipe for this diner classic uses easy-to-find ingredients.
- Ground Beef. We use lean ground beef.
- Onions. Sliced white onions are usually used, but a sweet yellow onion can also be used.
- SPG seasoning.
- Cheese Slices. Typically the cheese used is processed cheese slices. We have also used cheddar slices.
- Garlic Toast. This is different from the usual bread used for patty melts. We prefer the thickness of Texas Toast and the garlic on the toast adds to the melt.
What Is SPG?
SPG is a must-have for anyone interested in BBQ. It is a simple seasoning that can be used on just about anything and everything.
It is simply made from Kosher salt, black pepper, and granulated garlic. Everyone seems to have their own ratio for making this seasoning.
Our ratio is 1 cup of kosher salt, 1 cup of garlic, and 1/2 cup of pepper. But this recipe does vary sometimes depending on what we are making.
How To Serve These Griddle Patty Melts
These burgers are great on their own, but there are some ways to turn these into a meal.
- Fries. Serve these patty melts like they do in diners with a side of french fries.
- Salad. A side salad is great with patty melts.
- Cheese Dip. We make these with our Cheese Dip for Burgers.
- Potato Salad. This is a go-to for us in the summer.
How To Store Leftovers
If you have leftovers, it is best to store the meat separately from the bread. We assemble the melts only as we serve them.
Any leftover patties can be stored in the fridge in an air-tight container for up to 2 days.
Reheat the patties in a microwave for 2-3 minutes or until heated through. Then assemble the patty melt.
Griddle Patty Melts

Ingredients
- 2 pounds ground beef
- 1 large white onion, sliced
- SPG seasoning
- 6 cheese slices
- 12 Texas Toast Garlic Bread slices
- 1-2 Tbsp vegetable oil
Instructions
- Divide the ground beef into six evenly sized patties, making them rectangular to fit the bread.
- Heat griddle to medium-high heat
- Pour the oil on the griddle and spread it evenly over the surface using the back of a spatula
- Add the onion slices to the griddle and cook until starting to brown.
- Separate the onions into six even-sized piles.
- Place a patty on top of each onion pile.
- Season with SPG, about ½ tsp per patty.
- Close lid and allow to cook for 2-3 minutes.
- Flip the patties over so that the onions are on top of the patties.
- Cook for 2 minutes.
- Top the patties with cheese slices
- While the patties are finishing cooking, toast the bread on the other half of the grill.
- Flip the toast over so the toasted side is facing up.
- Place the patties on the toasted sides of 6 slices of the bread.
- Top the patties with the remaining 6 slices of toast.
- Remove from the griddle and serve immediately.
