Pineapple Rum Slush

On a hot summer day, there is nothing better than an ice-cold drink to cool you down. Slushies are a big hit with kids, and this ‘grown-up’ version of a slushie is perfect for hot summer afternoons or evenings. Pineapple Rum Slush is a refreshing cocktail for sipping by the pool or serving at a BBQ.

What to Serve This Drink With

This recipe pairs very well with spicy dishes. The sweetness of the pineapple offsets the spiciness of dishes like jerk chicken and curries. It also goes well with hot wings.

Another great option to serve this drink with is pulled pork sandwiches or tacos. Or serve them with chips and salsa.

Anything with a little or a lot of spice goes well with this cocktail.

The Ingredients

With only three ingredients, this is an easy-to-make drink that tastes great and is perfect for a hot summer day.

Many recipes for drinks like this one use coconut water or just plain water. I prefer to use pineapple juice. And I like to garnish with maraschino cherries instead of more pineapple.

The use of Malibu Rum is my choice for the alcohol in Pineapple Rum Slush, but white rum can be substituted if Malibu is not available or on hand. The amount of rum used can also be adjusted to taste. The recipe calls for 2 ounces of rum per serving, but you can adjust it to 1 or 1½ ounces. Or even more, if you prefer.

If you can’t find frozen pineapple, you can use fresh pineapple that is cut into chunks. Place fresh pineapple chunks on a plate or sheet pan and freeze for at least an hour before blending.

Malibu Rum

There is something about Malibu Rum that just says summer is here. Sunny days and warm weather are the perfect backdrops for a Malibu Rum Cocktail.

The tropical flavours in Malibu Rum make this liqueur perfect for summer. It’s sweet and smooth making it an ideal addition to summer cocktails.

Equipment

To make this drink, I use a blender. If I am only making these for myself, then I use a personal-sized blender, the same one I use for smoothies. When I have company and I am serving multiple servings, then I use my larger blender, Paderna Vortex Blender.

I like to serve this slush in a stemless wine glass, but for a fancier look, I serve Pineapple Rum Slush in hurricane glasses with a slice of fresh pineapple.

Making Pineapple Rum Slush for a Crowd

This recipe is easily doubled, tripled, or quadrupled. When making a large batch, the amount of Malibu Rum used can be altered to your taste or that of your guests. I use 1½ ounces of rum in place of 2 ounces per serving when making larger batches.

Can Pineapple Rum Slush Be Made in Advance?

When making this for a crowd, a pitcher of the prepared drink can be kept in the freezer for up to an hour before serving.

Another way of storing these cocktails once prepared is pouring the prepared slush into Mason Jars, sealing them tightly, and storing them on ice in a cooler in the shade. This way you can grab one as you want it without having to make them fresh every time. They will stay cold in the cooler but may not be as thick as when they are freshly made.

Ingredients
  

  • ¾ cup frozen pineapple
  • ½ cup pineapple juice
  • 2 ounces Malibu Rum
  • maraschino cherries for garnish

Instructions
 

  • Place all ingredients in a blender
  • Blend until all pineapple chunks are pureed
  • Pour into a stemless wineglass or hurricane glass.
  • Top with a couple of cherries for garnish and serve with a straw
