What is A Brookie?

A brookie is a combination of chocolate chip cookies and brownies. This recipe combines our Brownies and our Chocolate Chip Cookie recipes. The two recipes are combined to make these individual brownie and chocolate chip layered bars.

Ingredients For The Chocolate Chip Cookie Layer

The bottom portion of these Brookie Bars is made from Chocolate Chip Cookie Dough.

  • Shortening. All vegetable shortening or butter-flavoured shortening can be used in the cookie recipe.
  • Brown Sugar.
  • Egg.
  • Milk.
  • Vanilla Extract.
  • All-Purpose Flour.
  • Baking Soda.
  • Chocolate Chips. Any chocolate chips will work.

Ingredients For The Brownie Layer

The top of these bars is made from one of our brownie recipes.

  • White Sugar.
  • Cocoa Powder.
  • Flour.
  • Baking Soda.
  • Eggs.
  • Vanilla Extract.
  • Butter.

Equipment To Make This Recipe

To make these brookie bars, a sectioned brownie pan is used to make them individual. This type of pan is great because every piece has edges which are usually the best part of brownies.

Baking them in these pans makes it easier to use this recipe for a bake sale or a get-together because the pieces are the same size.

A muffin pan can also be used to make these.

How To Serve Brookie Bars

These Brookie Bars can be served as they are or as part of a dessert. They go well with a cup of coffee or tea or a glass of milk.

  • Add a scoop of ice cream on top and a drizzle of chocolate syrup for an easy summer treat or at a BBQ party.
  • Add some fresh berries and whipped cream for a decadent dessert.
  • Top with whipped cream and shaved chocolate.
  • Shake a little powdered sugar over the top for contrast.
  • Break into pieces and stir into softened ice cream for a Brookie ice cream dessert similar to a Blizzard or McFlurry.

Storing Leftover Brookie Bars

After cooling completely, these bars should be stored in an air-tight container at room temperature. They will last up to 3 days this way.

They can also be frozen for up to two months. Thaw at room temperature before serving.

Ingredients
  

Chocolate Chip Cookie Layer

  • ¾ cup shortening
  • cups brown sugar
  • 1 egg
  • 3 Tbsp milk
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup chocolate chips

Brownie Layer

  • 1 cup white sugar
  • cup cocoa powder
  • ½ cup all-purpose flour
  • ½ tsp baking soda
  • 2 eggs
  • ½ cup melted butter, cooled

Instructions
 

  • Preheat oven to 350℉.
  • Grease a brownie pan with butter or shortening

Cookie Layer

  • In a stand mixer, cream shortening and brown sugar until smooth and creamy, about 5 minutes.
  • Beat in egg, milk, and vanilla extract.
  • Stir in flour and baking soda on low speed until just combined.
  • Fold in chocolate chips.
  • Press even amounts of cookie dough into bottoms of the brownie pan sections.

Brownie Layer

  • Whisk together sugar, cocoa powder, flour, and baking soda in a medium-sized bowl.
  • Add eggs and vanilla extract, stirring to combine. Dough will be dry and chunky.
  • Add melted butter and stir until combined.
  • Spoon brownie batter evenly over cookie layer in prepared pans.
  • Bake in preheated oven for 22-25 minutes or until the brownie layer is baked through but still soft.
  • Allow to cool in pan for 5 minutes before removing bars from pan to cool on a rack.
  • Store cooled bars in an air tight container for up to three days.

Notes

A muffin pan can be used in place of the brownie pan.
