Ingredients For Triple Chocolate Chip Cookies

This recipe is a typical chocolate chip cookie with a few changes.

  • Shortening. Regular shortening will work, but we use butter flavoured shortening like Golden Crisco.
  • Brown Sugar. This is where the caramel flavour and colour comes in that makes a great chocolate chip cookie.
  • White Sugar.  Just a small amount of white sugar is added for sweetness to help balance the chocolate.
  • Egg.
  • Milk.
  • Vanilla Extract.
  • Baking Soda.
  • White Chocolate Chips. When making this cookie recipe, we use mini white chocolate chips but regular sized works as well.
  • Dark Chocolate Chips.
  • Semi-sweet Chocolate Chips.

Why Use Shortening In Cookies?

Recently we have started using shortening in our cookie recipes to replace butter. The reason for this is because we have found many butter now contain too much liquid and it affects the overall finished cookie.

If butter has too much water in it, cookies will spread more and will be crispy. We prefer to use shortening to prevent this.

Substitutions

If you can’t find white chocolate chips, a white chocolate bar can be chopped into small pieces in place of the chips.

European butter can be used in place of shortening since it does contain less water.

What Can You Do With Chocolate Chip Cookies?

Besides eating them as is, there are other ways to enjoy chocolate chip cookies.

  • Turn these cookies into ice cream sandwiches by adding a scoop of softened ice cream between two cookies and freeze for 30 minutes before eating.
  • Make small coin-sized cookies and use them to decorate cakes or as cupcake toppers.
  • Flip a cookie upside down, add marshmallow fluff and crumbled graham crackers to make a s’mores type treat.
  • Sandwich a roasted marshmallow between two cookies for a campfire treat.

How To Store Triple Chocolate Chip Cookies

After cooling, these cookies should be kept in an air-tight container at room temperature. They will keep fresh for up to 3 days.

Freezing these cookies are also an option. Place cooled cookies in an air-tight container or freezer bag and freeze for up to 2 months.

Can Triple Chocolate Cookies Be Made Ahead?

There are two ways to make these cookies in advance. Both methods have been tested by us numerous times and they are both great ways to make the dough ahead and have it ready when you get a craving.

The dough can be made and covered in the fridge for up to 24 hours before baking. This is a great way to make the dough the night before you want to bake them.

Freezing Dough Balls

Freezing the dough is also a good way to make this recipe ahead of time. To do this, scoop the dough into portions before freezing. The easiest way to do this is to line a sheet pan with parchment paper and place cookie dough balls on the sheet pan. Freeze the pan for 30-45 minutes before transferring the dough to a container or freezer bag.

These frozen cookie dough balls will last up to 6 weeks in the freezer. To bake them, place frozen dough on a cookie sheet and bake as directed in the recipe, adding 2-3 minutes to the baking time.

Frozen cookie dough balls are great around the holidays to have on hand when company drops in. Just pop them in the oven and you have fresh baked cookies without a lot of fuss.

Ingredients
  

  • ¾ cup shortening
  • 1 cup light brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 2 Tbsp milk
  • 2 tsp vanilla extract
  • cups all-purpose flour
  • 1 tsp baking soda
  • ½ cup mini white chocolate chips
  • ½ cup semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350℉, and line a baking sheet with parchment paper.
  • In the bowl of a stand mixer, cream shortening and sugars together until smooth and creamy, about 3-4 minutes.
  • Beat in eggs, milk and vanilla extract.
  • Add flour and baking soda and beat until just combined.
  • Fold in the chocolate chips.
  • Scoop dough onto prepared sheet, leaving 2 inches between each cookie.
  • Bake in preheated oven for 10-13 minutes. Cookies will still be wet in the centre
  • Allow to cool for 2 minutes on baking sheet before transferring to a cool rack to finish cooling.
  • Serve at room temperature.
  • Store cookies in an air-tight container for up to 3 days.
